Shopping list for “Menu: Thanksgiving with an Italian accent”

The following list contains everything you need for Marco’s complete Thanksgiving menu, including the Croquettas he makes with leftovers. If you don’t plan to make the Croquettas, you can cross the potatoes and lemons off the list.

Fresh Produce

12 large leeks
8 large fennel bulbs
4 pounds mixed wild and cultivated mushrooms
4 bunches broccoli rabe (about 4 pounds total)
2 medium butternut squash (about 4 pounds total)
1 bunch celery
3 medium carrots
1 medium head cauliflower
6 large yellow onions (also called Spanish onions)
10 heads garlic
3 to 4 large bunches fresh sage
2 large bunches fresh rosemary
1 large bunch flat-leaf parsley
1 bunch fresh thyme
4 large, juicy oranges
2 small Yukon gold potatoes (3/4 pound)
2 lemons
Dried Fruit & Nuts
1/4 cup dried cranberries
2 cups pine nuts
1/4 cup chopped hazelnuts
Meat & Poultry
1 (14-pound) whole fresh or thoroughly defrosted turkey with giblets
1 (3- to 3 1/2-pound) whole chicken
2 pounds bone-in short ribs or other beef stew meat on the bone
1 turkey drumstick or 2 large turkey wings
Dairy & Eggs
2 pounds unsalted butter
3/4 pound Parmigiano-Reggiano cheese (about 4 cups freshly grated)
1 1/2 cups whole milk
1/2 cup heavy cream
6 large eggs
Baking & Spices
3 cups unbleached all-purpose flour
1/3 cup plus 3 tablespoons sugar
1/3 cup acacia honey
1/3 cup light corn syrup
1 teaspoon pure vanilla extract

1 (14-ounce) can whole peeled tomatoes in juice, preferably San Marzano
4 cups extra-virgin olive oil plus more for drizzling
1/2 cup olive oil (not extra-virgin)
1/4 cup vegetable oil
2 tablespoons good-quality aged balsamic vinegar

2 loaves good-quality rustic bread (about 3 pounds)
